The sea moss you’re holding didn’t come from a factory or lab. It was harvested by a single fisherman in St. Catherine, Jamaica. This is a place where the sea gives generously, but only to those who understand its rhythm.
Our local fisherman doesn't use a boat. Instead he paddles out on a surfboard at dawn, when the sea is still soft with light, and the air carries the hush of morning. Almost a mile from shore, he dives below the surface, scanning the rocks for the wild strands he’s known since childhood.
He’s not in a hurry. He takes only what he needs, careful not to disturb the balance that’s kept these waters abundant for generations. It’s a practice shaped by respect for the ocean and for the future. This beach isn't just where he works. It’s where his elders taught him to read the tides. It’s where the generations before him used to stand, rinsing fresh sea moss in saltwater and laying it out in the sun. The tradition lives on in him.
Once back on land, he cleans each piece by hand, inspecting every frond with a craftsman’s eye. Then he spreads the sea moss beneath the Jamaican sun, the same way it’s been done for decades. The drying process isn’t rushed. The sun and breeze do the work, locking in colour, texture, and vitality. On some days, the air is still and golden, the kind that makes you stop and just listen. On others, the wind rustles the seagrape leaves and carries the faint scent of salt and seaweed through the trees. It’s all part of the rhythm.
